Let the slew of pinterest-inspired food posts begin! Ever since I moved I noticed that I have not been cooking as much as I used to, which you think would be a good thing. Since I haven’t been cooking, I’ve been snacking… a lot! My tummy thanks me but my waistline on isn’t too happy. Someone once told me, “5 seconds at the lips, forever at the hips” and it’s true. So here is my ode to cooking more and snacking less. I thought I’d share with you guys my recent cooking confection, an Australian Brekkie (That’s the word they use for breakfast) Enjoy!

Breakfast Casserole

2 medium-sized white onions
6 eggs
2 egg whites (the recipe called for 8 whole eggs but removing the yolk from a few will reduce your cholesterol intake. Plus it tastes the exact same!)
4 fairly large potatoes
3 tomatoes
1 bell pepper
1 1/2 tsps of red paper - my family loves it hot.
1 tsp of black pepper
1 tsp of white pepper

Start by grading your potatoes. The original recipe said to use frozen hash brown potatoes but that’s exactly what we didn’t have so we made our own. A regular cheese grader does the trick. Once those have been prepared use  large skillet to cook them. Because potatoes naturally have a little water in them it’s alright not to use oil while cooking. You can though if you want them a little bit crispier. Cook those on medium-high on until they get a dark brown (Light brown, and they are still uncooked). Then flip them so the other side can get tanned too. Don’t worry if they start sticking to one another. Cook them until they are ready as if you would eat them them then. Once they are popped into the oven with the casserole they won’t change.

Set the oven for 350 Fahrenheit  /170 Celsius

Once that is done, start to chop your tomatoes, peppers, and onions and cook them until they are soft and the onions brown.

Mix all of that with your eggs and egg whites. Now you can add your spices (Use your discretion with the spices for maximum enjoyment). Then add your cooked hash browns. It’s probably best to add that chunk by chunk so you can mix them well in between. Also, because potatoes can suck up the taste of the spices, you might want to add a pinch more of the spices you already included.

When that is completed, get your 9 X 13 inch pan and coat the bottom with cooking spray.  Now you can pour in the mixture. Use the back of a spatula to press it all down.

Bake for 30 - 40 minutes and voila!

Mordecai and Hegai say what?!

You know that point a the book where it’s getting so good you imagine yourself to be the character? Yeah, that just happened to me.

Imagine this: So you’re going to the king of your land and your given this one chance to impress him and make him like you, right? You’re allowed to wear anything, say anything, and do anything to get his attention. You have nothing planned out and the best advice you got comes from two old guys. One of them is kinda like your dad, which if you ask me cool advice and dads don’t really coincide. The other is some guy you just met in the king’s palace - can I say stranger danger?

This is the part of the story where you can either freak out or apply the “stay calm and carry on” rule. Let’s say you go on with your first choice. Where will that get you? A one way ticket to nowhere with some complimentary stress pimples just in time for your meeting with this said king. Or you can do like the girl in the story and listen to the two old geezers because their plans might just be crazy enough to work.

If this story sounds a little familiar it’s because I’m reading the book of Esther. (Jesus, Imma interrupt you here and say, Esther is one of the best books of all time. Just sayin’) Look, you can see from the picture below - daily bible study. Plus, not to mention a perfect excuse for a huge cup of coffee and some blackberry jam with butter on toast! Yum!

Anyway, let me not digress anymore. Why I’m writing this post is to point out what we fail to realize: In the midst of life-changing moments (*cough cough* like meeting a king or any other grand things in your life) grand and great gestures are not always a necessary response. God has given you what you already need to go forth. In Esther 2:16 it says, “she won the favor of everyone who saw her”, meaning that before she even said or did anything she was highly favored. Don’t think you need to hype yourself up, change who you are, or check out the competition to one-up them. Bring yourself and nothing else. Be simple. You dah-ling are more than enough.
Plus, I like to think that being simple = no pimple.

Excuse the mess on my table but I just had to show you this. I received this travel mug for free the other day at work and as I use it now for breakfast a thought just dawned on me:

Call it a hipster thing all you want but when you think about it, carabiner cups have proven to be one of the most convenient products out there. It’s a cup attached to a clip! How many times have you had an empty coffee mug with no place to put it? Its simple design eliminates one more stressful thing from your day.

Excuse the mess on my table but I just had to show you this. I received this travel mug for free the other day at work and as I use it now for breakfast a thought just dawned on me:
